What's All That Yammering About Sweet Potatoes?

From the Mississippi Sweet Potato Council Mississippi is the 2nd largest sweet potato producing state in the United States. Most are produced in Northern Mississippi and the largest acreage is centered around the town of Vardaman. In 2012, 104 commercial sweet potato growers planted 22,400 acres in Mississippi. The sweet potato is technically not really a potato, nor even a distant cousin. Potatoes are tubers; sweet potatoes are roots. Sweet potatoes are actually part of the Morning Glory family (Convolvulaceae); their genus Ipomoea batatas.
